As New Year’s Eve approaches we have one last chance to indulge before those resolutions are in place. Joe gives us some delicious recipes to indulge in while ringing in the New Year.
2 cups whole-milk ricotta cheese
1/2 cup loosely packed Pecorino Romano cheese
2 teaspoons finely chopped fresh oregano leaves
Freshly ground black pepper
1 tablespoon extra-virgin olive oil, plus more for coating the baking dish
Crostini or toasted bread, for serving
Heat the oven to 300°F and arrange a rack in the middle. Lightly coat a 2-cup baking dish with olive oil; set aside.
Place ricotta, 1/4 cup plus 2 tablespoons of the Pecorino Romano, and the oregano in a medium bowl and stir to combine. Taste and season with salt and pepper as needed.
Transfer mixture to the prepared baking dish, sprinkle with the remaining 2 tablespoons Pecorino Romano, and drizzle with olive oil. Bake until heated through and the Pecorino Romano on top is melted, about 30 minutes. Serve warm with toasted bread or crostini.
Endive with Shrimp
Rough chop the raw shrimp.
Satue the shrimp in the honey, balsamic and duck sauce.
Once shrimp are cooked remove from the pan.
Spoon into endive leaves and serve.
Three Cheese Mini Mac and Cheese Bakes
1/2 pound elbow macaroni
1 1/2 tablespoons unsalted butter, plus more for brushing
1/4 cup freshly grated Parmigiano-Reggiano cheese
2 tablespoons all-purpose flour
3/4 cup milk
4 ounces cheddar cheese, shredded
4 ounces deli-sliced American cheese, chopped
1 large egg yolk
1/4 teaspoon smoked paprika
Preheat the oven to 425 degreese. In a large saucepan of boiling salted water, cook the macaroni until al dente. Drain, shaking off the excess water.
Brush nonstick mini muffin tins with butter. Sprinkle with 2 tablespoons of Parmigiano.
In a large saucepan, melt the butter. Whisk in the flour over moderate heat. Whisk in the milk and cook, whisking, until boiling. Add the cheddar and American cheeses and whisk until melted. Remove from the heat, whisk in the egg yolk and paprika. Fold in the macaroni.
Spoon slightly rounded tablespoons of the macaroni into the prepared muffin cups, packing them gently. Sprinkle the remaining Parmigiano on top.
Bake the mini macs in the upper rack of the oven for about 10 minutes, until golden and sizzling. Let cool for 5 minutes. Using a small spoon, carefully loosen the mini macs, transfer to a platter and serve.
Joe loves serving Sliced Beef Tenderloin on Bread with Horseradish Mayo for New Years Eve. Here is his recipe for the perfect Horseradish Mayo.
Combine the horseradish with a 50/50 mixture of sourcream and mayo. Stir all ingredients together and serve.
Another New Year’s Eve favorite is shrimp cocktail. Here is Joe’s recipe for a delicious cocktail sauce.
Combine all ingredients together and refrigerate overnight.
Serve the cocktail with jumbo shrimp and enjoy!

Pour cognac and Grand Marnier into a champagne flute, top up with brut champagne
1 1/2 ounces brandy
1 1/2 ounces Cointreau
1 bottle club soda
Rind of 1 orange
Slices of pineapple
Slices of orange
Pour all ingredients into a punch bowl. Add large ice cubes. Decorate with sliced fresh pineapple and orange and plenty of fresh mint. Add crushed fresh strawberries for some extra flavor.
